Back in Old Blighty. Here’s a good Olde English recipe for sausage and mashed potatoes.
First, get some onions and some good sausages.
Slice the onions and cook them for a few minutes over medium heat. When they are soft add the sausages and cook until everything has browned.
Next, pour in about a cup of beef stock and a half a glass of red wine while you’re at it. Simmer for about 20 minutes. This will thoroughly cook the sausages and soften the onions. Put the potatoes on to cook about this time.
To make gravy, put a couple of spoonfuls of corn flour into a bowl and whisk in some warm broth.
When the corn flour has dissolved, stir it into the pan and let it simmer for a few minutes until the gravy thickens.
By this time the potatoes should be cooked and ready to mash. Add butter, cream or plain yoghurt, some fresh thyme and salt and pepper.
