Happiness is a Warm Muffin

Just because it’s Sunday and the final day of my Open Studio.  And I haven’t published a food post for ages . . . . .

Best Ever Banana Chocolate Chip Muffins


  • 3 large bananas
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 1/2 cups all-purpose flour + 1 tsp soda + 1 tsp baking powder OR 1 1/2 cups self-raising flour
  • 1/2 tsp salt
  • 1/3 cup melted butter or unsweetened applesauce
  • 1 cup chocolate chips

How to do it

  • Mash bananas
  • Add sugar and egg
  • Add melted butter
  • Add dry ingredients
  • Mix in chocolate chips
  • Bake for 18 – 20 minutes at 180ºC/375ºF

What made these muffins superlative is the addition of melted butter.  The happiness came from biting into the  just from the oven muffin and experiencing the ooze of partially melted chocolate chips.

  1. A really good recipe. I make muffins myself, yesterday I made muffins with apples. They turned out really moist and fluffy, but did not rise well. Any tips on how to make them rise?

    • Hiya,
      Make sure you use either 1) self-raising flour or 2) plain flour AND either baking soda or baking powder. I think if you use yoghurt or soured cream, you need to use baking soda.
